Based on their availability, their taste, their nutritional value, our traditions or simply our habits. But let us not forget that eating forms part of our cultural identity. People in certain countries have difficulty eating pets with which they have formed a bond of affection, while in other countries, unpopular animals such as rats, reptiles and insects arouse disgust. In France, some people eat rabbit, frog legs and horsemeat - all anathema to those in the UK! Large carnivores (or "apex predators") known to be capable of preying on humans are often regarded with distrust, and their meat reputed to be dangerous or malodorous.
